Almond Date Energy Balls

Almond Date Energy Balls

Ingredients

  • ·12 Medjool dates, pitted (about 1 cup packed)
  • ·¾ cup natural almond butter (smooth, no added sugar or oil)
  • ·1 cup unsweetened desiccated coconut, plus extra for rolling
  • ·¼ cup raw almonds, roughly chopped
  • ·1 tsp pure vanilla extract
  • ·¼ tsp sea salt
  • ·Optional: 1 tbsp raw cacao powder (for a chocolate version)

Instructions

  1. 1 Place the pitted dates in a food processor and pulse until they form a smooth, sticky paste.
  2. 2 Add the almond butter, coconut, vanilla, and salt (and cacao powder if using). Pulse until the mixture comes together into a thick, sticky dough.
  3. 3 Remove the blade and stir in the chopped almonds by hand.
  4. 4 Refrigerate the dough for 15 minutes — it is much easier to roll when slightly chilled.
  5. 5 Lightly dampen your hands (this prevents sticking). Scoop about 1 tablespoon of dough and roll into a ball. Repeat to make 16 balls.
  6. 6 Roll each ball in extra desiccated coconut to coat completely.
  7. 7 Place on a parchment-lined tray and refrigerate for at least 30 minutes until firm. Store in an airtight container in the fridge for up to 2 weeks.

If your dates are dry and stiff, soak them in warm water for 10 minutes and drain well before blending — they'll process into a much smoother paste.
