Overnight Coconut Chia Pudding

Thick, creamy coconut milk pudding loaded with chia seeds and topped with seasonal berries. Prep it the night before for a zero-effort morning.

Overnight Coconut Chia Pudding

Ingredients

  • ·1 × 400ml can full-fat coconut milk, shaken well
  • ·¼ cup (40g) chia seeds
  • ·1 tsp pure vanilla extract
  • ·1 tbsp raw honey or pure maple syrup (optional)
  • ·Pinch of sea salt
  • ·Fresh berries (blueberries, raspberries, or strawberries), to serve
  • ·Toasted coconut flakes, to serve

Instructions

  1. 1 Pour the coconut milk into a mixing bowl or large jar. Whisk in the chia seeds, vanilla, sweetener (if using), and salt.
  2. 2 Stir vigorously for 1–2 minutes, then let it sit for 5 minutes and stir again — this prevents the chia seeds clumping at the bottom.
  3. 3 Cover and refrigerate overnight, or for at least 4 hours, until thick and creamy.
  4. 4 Before serving, give the pudding a good stir. If it's thicker than you'd like, stir in a splash of coconut milk or water.
  5. 5 Divide between two bowls or glasses. Top with fresh berries and toasted coconut flakes. Serve cold.
